French Onion Soup

So this morning I come to find a 10lb bag of onions in the kitchen… Thanks mom? Given that my mother just flew out of the country to meet up with my father the refrigerator is not as full as we are accustomed to. But really? 10lbs of onions? Would have loved to find some lamb chops or some nice desert ingredients… oh well. When life gives you lemons, make lemon aid… So mom gave me onions, onion soup it is!

What you will need:

  1. 5 onions
  2. About 1 gallon of water
  3. 2tbsp chicken broth in powder
  4. Dry white wine (about 1/2 of a bottle)
  5. 1 whole garlic, chopped
  6. 2tbsp chopped fresh rosemary
  7. 2tbsp chopped fresh thyme
  8. olive oil
  9. brown sugar
  10. grated cheese
  11. french bread, toasted.
  12. Salt & pepped

Directions:

– Peel onions and chop into thin ringlets

– In a pan, simmer onions with olive oil and sprinkle some brown sugar on the onions. Keep cooking on low until onions are browned and they wilt and shrink dramatically.

– Add the onions to a pot of boiling water mixed in with the chicken broth powder.

– Chop the garlic finely and cook in a little bit of olive oil. Once it is browned add to the soup.

– Add the chopped rosemary and thyme to the soup.

– Add about 1/2 bottle of a dry white wine.

– Finish seasoning the soup with salt and pepper to taste.

– Grate some cheese (I used Gouda from Costco.)

– Toast some bread.

– Place the toasted bread on the bowl and cover with a thin layer of cheese.

– Place the bowl in the oven at 400 degrees for about 5 minutes.
