Apples are one of my favorite ingredients for the fall. not only do i use them in the kitchen but also as decorations, cute “for no reason” gifts, teas… and more!
I had a bunch of apples I got at the farmers market so I decided to make a cake! Here is what you will need:
Original recipe makes 1 – 9×13 inch cake
4 eggs
1 1/4 cups vegetable oil
2 cups brown sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/8 teaspoon ground Clove
3 cups grated gala apples
For frosting:
1/2 cup butter, softened
8 ounces whipping cream
4 cups confectioners’ sugar
1 teaspoon vanilla extract
1/2 cup cajeta quemada
For filling: 1 cup Cajeta Quemada
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
- In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon, allspice and clove. Stir in apples. Pour into prepared pans.
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- To Make Frosting: whip together butter, whipping cream, confectioners’ sugar, vanilla extract and cajeta quemada. If the frosting is not thick enough you may add some more confectioners sugar.
- Once cake is cooled spread the 1 cup of Cajeta Quemada ontop of one of the bakes cakes. place other one on top. Frost with cooled frosting.
- for garnish you may caramelize some finely chopped apple slices and place them on top of the cake in a flower like pattern.
